I don't think the standard battery is 1000mAh, I think it's 1500mAh(at least in the n800). Nokia sells a rechargable external job, but as far as I know an extended-life internal is a no go. And I've looked, trust me. It would be great if someone would come out with a 1800 or 2000mAh internal though.

Just to help qualify that statement, the N8x0 will not charge via mini-USB. You are referring to a USB-to-Nokia-charging-connector charger

Rock, that will charge the N810, but the USB connector is wrong. I've seen Mini-B to Micro-B adapters, which would make it both charge and communicate.
To my knowledge, there is no hi-cap battery for N800 or N810. But, if a fellow had or made a spare back-door, it could be modded to accomodate a larger battery, and an adapter could be made to fit a different battery (same chemistry, different form-factor and higher capacity) as a replacement. I know no reason this wouldn't work, though I'm aware that any mucking with Li-ion batteries is both dangerous and warranty-voiding.
I'm thinking of doing this, but can't decide whether to make a clip-on backpack with a powered USB hub and 5V charger, or just a replacement battery & lid... Don't really have to worry till I have time.
