Don't have my N9 handy right now but can't you change the language to French? I am curious what is different between Chinese and French firmware except perhaps predownloaded maps. Is rootfs not enough?
rootfs is basically the root file system(/ directory of N9). The OS data resides here.
The
DFL61_HARMATTAN_40.2012.21-3_PR_LEGACY_001-OEM1-958_ARM.bin
is used to flash this area as it contains the OS Data. This file is referred to as rootfs file or just rootfs.
This is similar to ROFS in Symbian.
The other file
DFL61_HARMATTAN_40.2012.13-7.FRANCEBENELUX_EMMC_FRANCEBENELUX.bin
is the file that contains Maps data, Music, Pictures depending on your Country/Product Code. This goes into the /home/user/MyDocs directory.
It won't work. As you noticed, you have a "PR_003" associated with your product code (I have 005).

The variant code for FRANCEBENELUX is 001, and it's a 003 on your phone. Since you want something else than China firmware, you should at least take one with 005:

Just take the New-Zealand firmware by example, they are all the same anyway.

About the second file, eMMC image, you can take any of them. It doesn't really matter. You will have the country map pre-installed, things like that.

Il y a deux commandes a executer. Une pour flasher le firmware. L'autre pour flasher l'image EMMC.
Tu peux prendre n'importe quel product code. Pour le n9 c'est un chiffre sans valeur. Ca permet juste de connaitre le variant code.
