Probably a little late on this, but have a question about updating OS2008 on my Nokia N800.

I've been updating the OS through App Manager since OS2008 became available in October/November. Is this now going to be the way the OS is updated rather than having to go through the constant flashing that updates to OS 2007 required? This way is more similar to Windows (sorry) updates. It is nice not having to restore all the settings every time.

Uh . . . no. You're really not actually updating much, and "Operating System" meta package (only available in Red Pill mode) actually has the potential to drop you into a reboot loop.

Flashless-updates are slated for Diablo.
