How do upgrades work?

Hi again,

I was just just wondering how upgrades work. A dev ports a particular version of SFOS to a phone (2.0.5.6 in my case). Is it ever possible to upgrade the OS to a later version on the phone itself, or would it all depend on the version of CM that was used a base and kernels etc.? Just curious.
