I use the n810 as a book, and so I'd prefer that it didn't flash the led for any reason while I sleep.

Of course I can turn off each of the led actions but what I really would like is a one-click toggle that just turns off the led, or turns it on.

Has anyone come across something that does this?

I usually just set it to offline mode: press the power switch and select 'offline'. That stops any externally generated events such as emails flashing the light. Also it reduces battery consumption.
