First thing you need to get is your Bluetooth MAC address for your phone, which you can find in the tablets Bluetooth device settings. Enter that in the first line in Gnoki Gconf (which you open from the Control Panel, near the bottom).
Then select your phone model, which I'm told most non-Nokia phones get set to AT. Check the wiki page for Gnoki for the list of phones that have been tested. They list their settings, look for a Motorola and see what phone model its set to.
Finally, the rtcomm number I think is just trial and error. Select each number and tap Identify Phone until your phone gives confirmation that its connected. If gnokii crashes, reboot it and set the rfcomm to the number that worked, and press OK. When you start Phonelink the tablet and your phone should connect, assuming you have the SMS and/or phone options checked in Phonelink.
Note: Bluetooth should be turned on for both devices before using gnokii, but I don't think you need to have them paired before hand.
Ok I have done all the above but the problem is that when I step through the ten rfcomm numbers either gnokii-gconf gives an error:
You know it connects fine & then disconnects, but then gnokii-gconf vanishes. That is what I'm calling a crash.

I am able to send/receive sms and ask the phone when I receive a call, but I couldn't hear anything, either my N800 or my sony ericsson w810i. Any idea?
you're not supposed to hear anything with your N800 but if yau accept the call you should be able to hear it in your phone, at least that is how it works with my sony ericsson w880i ...

I tried all the settings but still no luck, the only way I can hear it is to go back to the phone and manual change the setting to transfer the sound to the phone. And also the phone do not allow to connect more than one bluetooth devices at the same time. So if it is connected to n800, it cannot connect to the bluetooth headset.
