Can I pair a N810 WiMax with a stereo bluetooth headset (BH-501) or any other, to listen to stereo music through them?

I did pair them, but the music is still coming from the built-in speakers... should I return the headset?

Search around in this forum. There is a hack to get stereo bluetooth working. Diablo does not support it natively. Cant remember where it is but I know people were working on it.

Search for A2DP on ther forums.
In short - you need to enable A2DP support (this is the Bluetooth profile whioch enable stereo Sound support over bluetooth). Otherwise even if you do manage to pair it with any BT headphone, it will be in mono sound.

A2DP support is not enabled by default - the below thread is a hack to get it working.
There are some downsides to it - CPU usage goes up very high when playing stereo sound over BT
