Is there anyway to get rid of unwanted stock programs like Mahjong? And is there a offline version of Dice Wars?

I haven't tried, but in principle you should be able to remove mahjong from the command line.

Open an xterm, sudo gainroot (or whatever you do to get root on your version), then
    dpkg --list|grep mahj
    After that,
dpkg --purge <list the packages that was output of the above>

That should work, unless there are some crazy dependencies somewhere in the system (on which you would blame Nokia).

    Mahjong has 3 packages:

    /home/user # dpkg --list|grep mahj
    pi osso-graphics-game-mahjong
    1.4.2-1 OSSO
    graphics files for Mahjong

    ii osso-mahjong
    1.5.15-0 OSSO
    Mahjong

    ii osso-sounds-game-mahjong
    3.0.5 OSSO
    sound files for Mahjong

    /home/user #

What if I want to get rid of all stock games on there (maybe except Tetris), do I have to go through every single one or is there a simpler way?

On my system those games are not listed in the application manager, so it looks like the above is the only way. Unless enabling red pill mode will make them visible in the application manager.

If I break the system in red pill mode will a flash fix it or is it gonna be paper weight forever?

I too would like to uninstall some of the built-in apps, but I think the problem is that then osso-software-version-rx*4 will be removed too, meaning the Seamless Software Updates won't work.

You can download the Dice Wars swf into your tablets memory.
And then you can just open it with your browser.

When in red pill mode and trying to uninstall some junk that comes with the latest version of Diablo, every single file seems to have a dependency on OS2008 Feature upgrade (unlocked).

Is there any way to get around this?

    Thanks!

nope, there is not, as that is a "metapackage" or something that nokia use(s/d) to make it simple for users to spot a SSU...
