Both Versions should work in Australia unless your with Telstra.
All the other carriers are 900Mhz and 2100Mhz
I think id go with the EU version as it doesn't have the 850Mhz GSM like the US version has. I'm not expert would be good to hear from people who know about these things. I've looked it up and thats what I can figure so far.

Comparing the product specs on UK and USA sites, it appears they support the same frequencies. Is this correct? Do you remember where it said that the EU version doesn't support 850MHz?
I'd check the availability of the N900 from the online Nokia store in Canada, but they don't have one.
I suspect Canadians will be getting their N900s from the States, just like we did with the N800.
I wish we didn't always get the short end. I wanted to pre-order, that's how excited I was about the device, I even added it to my cart, from the us store, and boom. Not possible.
The US version supports 3G on 850Mhz but I think NextG is more than just a frequency change. I could be wrong any NextGers from Australia want to correct?
