Is it true that the call log is limited to 30 days? I don't see why there is a limitation. There should be at least an option for it to be unlimited, or archived, or something similar. I know for example the HTC hero's is unlimited.

First entry in my N900 call log is from 3 Sep so more than 30 days old. The call log combines entries so if I call to same number I only see the last one in the log.

I find it funny that an Open source operating system has a limitation of a 30 call log limit on a phone. Why cant somebody just turn this off?

Um, every contact has communication history in the contact's menu which keeps all the calls. However it is in Contacts app and not easily accessible from the phone app.
