The wiimote and ps3 controller should be easy enough to get working because they use bluetooth and there are already ways to sync them to linux.
The xbox 360 controller on the other hand has its own wireless protocol akaik, so you would have to use the official wireless dongle for pc, and hope that usb host mode can be activated somehow. Frankly if you're going to have a dongle hanging off the phone you might as well be using a wired controller anyway.
