I've had good luck connecting using my LG-VX9800 (the LG-V) on VZW, but it took some hacking on both the N800 and my phone.
On the N800 side, you need to edit /etc/ppp/options to force PAP by disabling CHAP and CHAPv2, by adding the
refuse-chap
refuse-mschap
refuse-mschap-v2

I have a Verizon Motorola E815 on which I've enabled Bluetooth DUN (dial-up networking) and OBEX. My understanding is that VZW only officially supports tethering to the EV-DO network through USB (not Bluetooth), so this is perhaps not for everyone. I have the $15/mo VCast plan on my phone.
That having been said, it works very well with the N800. I recently drove about 55 miles with Maemo Mapper automatically downloading hybrid (satellite+map) image tiles the whole way. On the way back, I had Rhapsody streaming music pretty much the whole way with only one disconnection.

Hi Pa28pilot,
Can you please give a little more detail about how you enabled Bluetooth DUN (dial-up networking) and OBEX? This sounds like a good option for me if it's not too over my head technically.
