I came across the following in PC World. Stanford University is offering (for the second time) an iPhone Application Development course. Class lectures will be available on iTunes as free downloads and the course materials will be on Stanford's website. The lectures themselves are taught by Apple employees on Stanford's campus.
Forum Nokia has a nurtured relations (organized trainings & workshops for university professors and other personnel) with various universities around the globe. As a result multiple courses have been taught around Nokia technologies. Maemo has been included in these collaborations in the past and especially last year (when a number of Maemo & Qt related events were organized by Forum Nokia in different parts of the world).

I'll check if my colleague has a more complete list of on-going (maemo related) courses in Universities and if there are recordings available for those.
