-By editing the "seta accel[...] lines in the /home/user/.openarena/baseoa/q3config.cfg file
-fn + ctrl then type /quit in the console
- you can't yet (at least on a azerty keyboard, I don't know for other)

I think the esc key is fn + , (= key)
