I don't see why one would alter the UI from the N800 much. If anything, I'd make it simpler and the right-side menu and statusbar could be more customizable. Same goes for look & feel: the fontsize should be an option, not by manually changing system files whilst having root access. The simple launcher (not Nokia, I know) should have more options like multi-row and commandline input. Also, the apps that are on the desktop should have a transparant option. The clock applet and weblauncher for example are plain ugly when not transparant.

If I want an iPhone, then I'll buy one.
But I don't. I don't care how "cool" the UI is on the iPhone (yes, I've used one) for an internet tablet like the N800 I prefer what it currently has, with a few additional apps to make it easier/faster to launch applications with.
And if you think Apple hasn't pretty much patented everything on the iPhone from the UI down to the hardware itself then you're just deluding yourself.
Apple learned it's lesson from the great Apple v. Microsoft battles of yore and patents EVERYTHING it comes up with now.
They would jump at the chance to go after their new competition - Nokia - if they try to make the N800 more "iPhone-like".
And if Apple files the case in a certain court in Texas, then they pretty much automatically win.
