Every time I reply or fw a mail on my N900 device it put this anoying > character in front of the old text.
Is there any way to prevent that?

That is a standard feature of good email clients. Good email clients make use of the ">" to highlight quoted text in different colours/fonts to different between who said what. And even better email clients make use of the number of ">"s at the beginning of a line to further differentiate the generations of quotes with even more different colours/fonts.

good email clients put a ">"
excelent email clients lets you decide it with an option check.

We have a good email client, sorry

modest good email client is not!
