The real Matlab is out of the question: it's closed source, and there is no version for ARM Linux. Your best bet would be Octave: http://talk.maemo.org/showthread.php?t=41227

I have been using Sliderule on my N900. It isnt Matlab, but gives y you some decent plotting, diferentiation, and symbolic capability.
