This setup works for me. I admit that the video quality from the front camera of N900 is not the best, but I have not had problems you reported. I would guess that Instability is probably from old version of empathy/telepathy and from laggy network connection.

i tried several protocols and clients on my linux pc
but so for i had no success. I want to establish a
stable connection where my linux pc automatically answers
a video call which is triggered from my N900. Can someone
help out with a setup? I didnt find anything in the forum
which works for me.
This is what i tried out so far with the build in instant messenger
on the N900 and:
1) Skype: No doubt, its propritary stuff but its damned good.
Unfortunately, the client on the linux pc does not support
h.264 and therefore video calling is not possible.
2) Gtalk: Again on my linux pc the gtalk plugin for firefox and
chrome crashs, i had no luck with the plugin.
3) Empathy with Jabber/Gtalk: Instable, i get videos on both
machines, the video is stuttering and in many cases the connection
is discontinued. The big advantage here: Its complete open source
and it works out of the box without port forwarding etc
I also tried out other clients/protocols like amsn, psi, kopete.
