I'm not sure how exactly it would fit in with your plans, but you can get free Google Apps for your domain name.
For example, you could provide Gmail-type email accounts (with IMAP) with 4+ GB of storage for each user (@jablet.net or @ldug.org).

Google Talk doesn't support the external IM gateways (most of the point of doing this to begin with), not all Gmail accounts are IMAP yet... but I don't want to rely on Google for stuff anyways. Kind of defeats the purpose, especially since there's nothing specific to the tablets.

I see you want to do it all yourself...
I can understand you wanting to do something unique with IM... but email? What can you do that would improve on Gmail (which supports POP, IMAP and web access, and would use your domain name)? And that page I linked to says that the email would indeed support IMAP.
Can you really provide reliable email service and 4 GB storage per user? And most users would be using POP or IMAP... so what tablet-oriented value would you be adding? Perhaps you could provide a unique tablet-oriented web interface to the mail, but you could do that and still use Gmail as the backend mail system.
I just don't see your reasoning when it comes to the opportunity to easily provide reliable email with substantial storage, all without any cost to yourselves.
