Open the Map application, go to Menu>Maps, and click on the "Available maps" tab. Select the map you want to download and click the "Download" button. I use a N810 so it downloads the maps to the internal memory by default. The N800 may ask which memory card you want to download to, but I can't speak from experience.
The North American maps are divided into USA East, USA West, and Canada (which I believe also contains Alaska). Downloading USA East will include (very) limited information for USA West (mostly freeways or other major roads, absolutely nothing even close to neighborhood level) and vice-versa. Unless space is an issue, I would recommend downloading both and selecting the one where you live as the default.
