Will it be possible to install the new Opera browser on the N800?

Unless it's a specific build for the ARM-based OS2008, no. The 9.x versions are all, as far as I know, for desktop linux systems, i.e. x86, not ARM.

The new Opera Mobile v9.5 still be be released states its compatible with symbian, windows mobile and linux, what that means I don't know?

It means that its possible that Opera might make it compatable with Maemo OSes, but nothing is confirmed just yet.

Just looking at the demo, it would a breath of fresh air to have something that has a suitable UI, and user expereince to match in terms of a browser. And if the speed can be fast in not only browsing, but also in accessing features, that would be great.

That would be nice ... I got used to being able to run Opera on my Zaurus, as well as Netfront. Great little browser.
