...I installed the map program and it deposited the map i downloaded into my internal memory device (all 700+MB)...
Is there a way to either tell the device which memory location is default or move the files manually and add an alias or assign a pointer...

You're using the Map program (a.k.a. Wayfinder) that came with your tablet, yes? If so, just make sure Map isn't running, and then use File Manager to move the entire "map" folder to the external card. When you next start Map, it will find the maps in, and use them from, their new location automatically.

Is there a way to either tell the device which memory location is default or move the files manually and add an alias or assign a pointer to make programs look somewhere else for the data? In dos it would have been an assign command but I can't seem to find anything similar for the nokia
Running:
Nokia 810 maemo linux 5.2008.43-7 os2008
I would like to have one memory card with all my maps on it and not eat up all the internal space with them.
Thanks!
