You would be looking any unusual looking spikes in cpu usage or large drops in battery capacity. 100% cpu usage is totally normally as long as it is not getting stuck there for a prolonged period of time.

What you mainly want to look at for Battery Graph is what it displays during periods when you didn't use it. Whenever you stick it in a pocket for a couple hours and do other stuff without using it for a while. Open up battery graph and see if there's any random processor spikes regularly in the time it wasn't doing anything, or if there's spikes/pits in the green volts graph. You won't see anything unless it's extremely drastic in the parts where you were using the N900, but when you leave it alone over night or something, the graph shows you if something was waking the processor up regularly when you weren't doing anything with it.

For spur of the moment monitoring, Conky (with some customization, and more so with the power kernel), HTop, and PowerTop are probably the best for watching battery activity and what's using power at any given moment.
