You need Theme Customizer, once installed, it's really ease to use, just select the icon set you want.

Theme Customizer it's available from the repositories.

TC wont work

If you want to mix and match you have to copy the icon files from opt/usr/share/icons the easiest way would be to use ssh and copy them on to your desktop.

Make another copy of hicolor and set it aside to revert to if you change your mind.

Then search for all the icons (many have several sizes) you want to use copy them all into hicolor then copy that back to opt/usr/share/icons

there are also additional icons inside opt/usr/share/pixmaps use the same method as above to change them.

Edit
Once you copy back hicolor use TC to select it and save and reboot.

big change in red important

I should also have noted that each icon has to be put into their respective folders eg hicolor/64x64/hildon, hicolor/64x64/apps, hicolor/32x32/hildon etc.

They cant all be thrown into just one folder, takes some time to sort through and get them all where they need to be
