    I was just asked on GTalk what the N800 Must-Have applications are.
    So far I've thought of:
    Canola
    Pidgin
    Camera app
    GMail Notifier
    Battlegweled

    High priority:
    simple launcher
    gmail notifier (mnotify)
    skype
    maemo mapper
    quiver image viewer
    wifiinfo
    osso-xterm
    becomeroot
    dropbear-server
    privoxy
    Nice to have:
    camera, or
    knips
    claws-mail
    fmradio
    free42 (HP calculator emulator)
    omweather

    There are some other apps. I use now and then, like battlegweled and the puzzles, and some more. The above I use a lot and I re-install them immediately after a firmware upgrade.

    Abiword (with MS .doc support that doesn't exist yet on the N800
    FBReader
    GPE Calendar, Contacts, To-do (with erminig for syncing to google calendar)
    A media player
    Maemo Mapper

    Very similar to TA-t3's list. I would just add PhoneLink and Claws-Mail in the high-priority stuff and remove Skype.

    BTW. Skype is forbidden (even to be installed!) at my workplace.
