run fdisk and delete all the partitions, then create a new partition 8GB VFAT. Then the OS should see it, I believe. Or then just run mkfs.vfat /dev/mmcXXXX
Then you should be all set? You may have to boot with the card in the device, sometimes it will not dynamically create the device files for the mmc partitions, when installing new cards....
