If it's like the N9, it's based on the MCC (mobile country code) of the tower you're connected to when you boot the phone - not the SIM.
Symbian is dramatically less hackable than Linux/Harmattan,...

Did you install the modded system-ui package? Replacing system packages with custom ones using INCEPTION tends to cause problems if you upgrade later. I'd suggest you download the PR1.3 firmware...

If you have INCEPTION 0.2 installed, you can change it immediately with ariadne hostname newname. Otherwise, rebooting with devel-su -c /sbin/reboot ought to do the trick.

Follow the N9 flashing guide stickied in this forum using the PR1.3 (40.x) region 001 image. This will overwrite NITDroid and return everything to normal.
