Why nobody says nothing about Azumanga Daioh! ??? is a must-have!
Also FLCL is terrific! (love the BSO)
And for serious anime, there's only one masterpiece: Ghost In The Shell (the series first than the movies)

Don't forget Last Exile and Samurai Champloo! For someone that likes Studio Ghibli I think you'll like 'em. They aren't kids flicks so much but not freako, far out Anime

Oh yeah, and Elfen Lied was awesome but certainly more adult themed.

They are all Ghibli films, directed by Hayao Miyazaki. Ghibli are also huge fans of Pixar, and have an exhibit for them in the Ghibli Museum.

My favorite of all times will be Trigun, Last Exile, Tengen Toppa Gurren Lagann, Berserk and of course Ghost in the Shell (both seasons).
Also very worth watching is Code Geass (both seasons) and Evangelion - including the new retakes (1.01, and 2.02 which will be available on Blu-Ray version next month at last).
