Here's a few suggestions; Debian I'm pretty sure deserves a slot in Alternatives, the others less so.
Debian
This is widely used, both as a standalone (independently booting) and chroot environment; Lenny and Sid are both used somewhat, and the ~3 threads reasonably active are growing long and hairy.
Qtopia
It exists for the tablets, though not much is heard of it. It usually gets brought up ~2/3 of the way through the natural life of some other thread. Perhaps a forum for it, with one starter thread with installation instructions, would be helpful?
Partial replacements
This could cover replacements for low-level chunks of ITOS, notably: Powerlaunch (replaces mce/systemui/dsme)
Bootmenu (replaces/supplements stock initfs)
And anything else I'm missing. Maybe that's not enough stuff (or even a coherent enough category) to justify one, but it's a thought...
