There doesn't seem to be any information of FULLY formatting the N900. There only seems to be information on how to flash the firmware. I've done this before and it doesn't delete the apps and photos etc. I've had my phone for over 6 months now and there is a lot of stuff on there I don't want.
Please advice how to FULLY format the N900.

I tried the following
sudo flasher-3.5 -F <firmware-image> -f -R
then held 'U' on my phone and plugged in the cable but all it's done is flash the firmware. I can still see my photos, messages and folders that I've created. Please advice on how to flash the ENTIRE phone.

Thats cause you didn't flash the emmc!
Follow the guide that was posted.
If you are using windows 7 64 bit, don't. Use ubuntu instead, even a live CD, it takes 3 minutes to do it with ubuntu, or any other linux.
Very simple!
- Download the firmware + emmc image (links in the wiki)
- Download flasher install it if needed.
- Run the flasher without the -R parameter (Make sure N900 is NOT connected)
- Hold the U button on N900 keyboard, Connect USB (make sure it's off!)
- Let it finish flashing
- Run the same command but with emmc image, and with -R
- It should finish in a few minutes.
- Your phone will be as good as new.
